new toy.

Today I did a little shopping South of the border with my Mom. A few hours, a Thai lunch of warm coconut chicken curry and greens in peanut sauce and a bit of browsing later, I came home with this gem. Gleaming stainless and rotating wheels. Turning a basic recipe of 2 cups of flour and 4 eggs into fettuccine.

So, so many possibilities. Any ideas for pasta noodle flavors?

beautiful! we LOVE our pasta machine! when we were in italy, we took a handmade pasta culinary course and i have the incredible recipe for the fresh dough i should share with you!
a lovely filling for stuffed pasta is sauteed aubergine (eggplant) mixed with ricotta (which you can also make at home... ask me for this recipe!) and fresh paramsan and an egg and a little salt and pepper... roll a flat sheet of pasta, make cirles of filling and cover with a second sheet of pasta, pressing the dough firm around the filling to remove air, and cutting with a cookie cutter. another fabulous one for autumn is roasted squash and chevre with rosemary.

I filled my tortellinis with a simple butternut squash puree, seasoned with salt, pepper and a touch of clove.

Try adding basil or pureed sundried tomatoes (or both!) to your pasta dough.
